All About Selling Meat & Poultry: What You Need to Know

Day-long workshop will provide information on all aspects of selling products to customers.

Farmers interested in selling meat and poultry are invited to a day-long workshop on Thursday, January 12, at the St. Cloud River's Edge Convention Center.

Registration begins at 8:30 am, and the first session begins at 9:00 am. Cost is $40 per person, and $30 for each additional person from the same farm. What you need to know about selling meat.

This workshop takes place the day before the Minnesota Organic Conference, but you need not be an organic farmer to attend. The meat workshop is intended for all farmers who are interested in selling meat from animals that they raise.

Scholarships are available, too. U-M Regional Sustainable Development is offering 12 scholarships to cover the registration fee for people living in northwest, west central, or southeast Minnesota. See the registration form for details.

Meat processing considerations and marketing for both red meat and poultry will be presented by Ryan Cox, U-M professor of meat science, and Wayne Martin, U-M Extension alternative livestock specialist. Levi Muhl from the Minnesota Department of Agriculture, Dairy and Food Inspection Division, will provide information about regulations that affect both processing and marketing. Organic and natural meat processing will be covered by Carissa Nath of the Agricultural Utilization Research Institute. A representative from Minnesota Grown will be on hand during breaks to assist farmers to register in the Minnesota Grown Wholesale Database.

The day will include panels of meat processors and farmers. Panelists will discuss a variety of options for selling meat and will answer questions from the audience. Processor panelists include representatives from the USDA-inspected plant in Miltona, and from State Equal-To poultry processors Nelson-Shine Produce Company.

State Equal-To meat processors and custom-exempt processors will also be represented on the panel. On the farmer panel: Mike Stine, beef producer; Tom Barthel, bison, beef, pork, and chicken; Lynn Mizner, lamb producer; and John Peterson, turkey producer.

Throughout the day workshop participants will be asked to write their questions about regulations on index cards. The final event will be a question-and-answer session with Levi Muhl. Workshop organizers will read questions from the collected cards so that all situations remain anonymous. Meat sales regulations are complex and this will be a great opportunity to hear the details from experts.
